I do really love corn. It’s one of my most favorite veggies. While we’re not quite in corn season yet, this is a perfect dip for you to make and enjoy. I’ve got a weekend planned with one of my BFF’s and I think I might make this little concoction for us to snack on. This happens to be one of those dips that gets better over time. The last time I made it we kept dragging it out of the refrigerator to eat it again. Yes, it’s that good.

1/2 cup of Light Sour Cream
1/2 cup of Light Mayo
2 cans of Mexi-corn, drained
2 cups of Sharp cheddar cheese, grated
1/2 cup of Green onions, chopped
1/2 cup of Red and Green peppers, finely diced
Mix together all the ingredients and chill for 30 minutes. Serve with corn chips.
